Ingredients
  

  • 1 cup cooked chicken, shredded or diced
  • 3-4 eggs
  • 1/2 cup diced tomatoes
  • 1/2 cup fried or roasted diced potatos
  • 1/2 cup diced zucchini
  • 1/2 cup bell peppers
  • 1/2 cup chopped onions
  • 1 tbsp olive oil
  • 1/4 tsp Salt, pepper, and paprika to taste

Instructions
 

  • Heat olive oil in a skillet or a pan on medium heat.
  • Toss in chicken, stir for about 8 to 10 minutes.
  • Add onions, diced tomato, zucchini, bell peppers, and saute until softened
  • Add fried potatos
  • Make small wells in the skillet and crack eggs into them.
  • cook while covering until the egg whites are set with the yolks still runny
  • Season and serve hot!
